The Peter Lehmann chardonnay philosophy is very much about making a delicate, soft refreshing style of wine with accent on the primary fruit flavours. Oak fermentation and maturation is used very sparingly; just 10% of the blend is fermented in new French oak using only wild yeast, followed by 6 months lees contact which gives a beautiful textural creaminess on the palate and adds complexity to the clean fruit characters. The carefully selected blend of Barossa Valley with the higher hills Eden Valley Chardonnay vineyards gives a wine with good depth of fruit and a stylish, taut structure.
