Fine and complex nose with aromas of ripe red fruits, dark cherry and plum. On the palate there are rich red fruit flavours and a subtle sweetness which is complimented by oak spices and dried herb notes. A firm and vibrant wine with well-integrated oak which leads to an attractive lingering finish.
Try with roast duck breast with fig and rosemary or crispy duck pancakes with plum sauce. Also pairs well with rich mushroom dishes.
This wine comes from selected parcels of organically grown 35 year old vines. The grapes are hand harvested and a minimalist approach is taken, including fermentation by natural yeasts. Fermentation took place in small stainless steel open top fermenters without pumping over. The wine spent 18 months in a mixture of new and old French oak giving structure and complexity.
