Pedro Ximenez, often called PX, is a Spanish white grape best known for producing some of the richest and sweetest wines in the world. Most famously used in PX Sherry, the grapes are sun dried to concentrate sugars before fermentation and ageing. The result is an intensely dark, luscious wine with flavours of raisins, figs and molasses, often enjoyed as a dessert wine.

What is Pedro Ximenez?

Pedro Ximenez is a white grape variety grown primarily in southern Spain, especially in Andalucía. Despite being a white grape, it produces some of the darkest wines in the world. It is most closely associated with PX Sherry, a fortified wine style renowned for its extreme sweetness and richness.

How Pedro Ximenez is made

After harvesting, Pedro Ximenez grapes are traditionally laid out in the sun to dry, a process known as asoleo. This dehydrates the grapes, dramatically concentrating sugars and flavours. Fermentation is then stopped through fortification, leaving a wine with very high residual sugar. Many PX wines are aged using the solera system, adding complexity and depth over time.

Flavour profile and style

Pedro Ximenez wines are intensely sweet and full bodied. Common flavours include raisins, dates, figs, treacle, coffee, dark chocolate and liquorice. Despite their sweetness, good examples retain balancing acidity that prevents them from feeling heavy. The texture is thick, unctuous and almost syrup like.

PX Sherry and beyond

While PX Sherry from Jerez is the most famous expression, Pedro Ximenez is also grown in countries such as Australia and Chile, where it is used to produce rich dessert wines. These styles may be unfortified but still show the grape’s signature sweetness and dried fruit character.
