Viognier grapes are harvested from the cool, coastal vineyards around the Etang de Thau, considered the second largest lake in France. It is here some of the most distinctive Viognier is grown and crafted to
display purity of fruit and a distinctive 'goût de terroir'.
The aromatic Viognier produces its aromas at a certain stage of maturation. The winemaking team taste the grapes in August, to choose the right day to harvest. Post-harvest the grapes undergo a short
skin-contact maceration. Then, the juice, after a delicate pressing and meticulous off-settling, ferments at low temperature.
