Wine Making
Destemming of the grape, skin contact maceration for 4
hours. Pneumatic pressing under inert gas. Settling at low temperature
(8°C). Fermentation for 3 weeks under controlled temperature (less than
17°C).
Ageing is made on lees with regular “batonnage”.
