Passitivo Primitivo is produced using only the best hand-picked
Primitivo grapes from low-yielding vineyards in Puglia. A portion of
these grapes follow a rare wine making technique called "apassimento",
whereby the grapes are dried for a brief period to concentrate their
aromas and rich fruit flavours. The resulting wine is intense ruby-red
in colour with a complex bouquet reminiscent of cherries, raspberries
and redcurrants. The partial oak-aging adds a pleasant roasted and a
spicy aroma and makes this full-bodied and supple wine, perfect with
roasted red meats and mature cheeses. This has always been one of our
most popular red wines.

About the Producer

In its fifth generation, Paolo Leo is based in the Salento wine
village of San Donaci. The story of this beautiful estate began at the
turn of the twentieth century, when Antonio Leo started to vinify the
grapes grown in the vineyards of "Masseria Monticello." The winery has
enjoyed constant investment over the years and is today a modern winery
,with a capacity of 120,000 hl and a barrel room housing 1000 French and
American oak barriques. Mainly indigenous grape varieties are grown in
the 80 ha of vineyards: Primitivo, Negroamaro, Fiano. The company is
certified, BRC/IFS, ICEA Organic, EQUALITAS.

A Good Red Wine

Has the same characteristic of another Primitivo I like; open the bottle fresh and there is a full hard flavour of currants and fruits. let it breath of a while and the flavour mellows out a bit and becomes easier to drink. Retains it's flavour for hours without going sour which is another plus.
