An elegant Brut, traditionally made sparkling wine. Pale straw colour with hints of elderflower and gooseberry on the nose. On the palate a delicate mousse with good structure and biscuity flavours indicative of yeast lees ageing.

The Vineyard

The grapes were hand harvested in 2019 and the juice fermented in stainless steel vats. In 2020 we inoculated the wine with a small amount of yeast to induce the secondary fermentation and bottled. The best Champagnes and Sparkling wines are made by méthod champenoise which requires a secondary fermentation in the bottle. The wine continued to sit on the lees for a
further 38 months before being disgorged.
