The taste is very little dosed, it is a nectar of elegance and complexity. The aroma is rich in ground aromas.
Made from 60% Pinot Noir and 40% Chardonnay, this displays inviting aromas of baked apples and peaches interwoven with buttery brioche. Rich mouth-feel with fantastic acidity and trademark Lallier vinosity. Excellent, clean, crisp and long finish.
We have had the honour of visiting Lallier. Absolutely incredible Champagne made with passion and integrity. The whole range is quite something. Don't let brand names sway you this is a must try.

Food pairing, A Champagne appreciated as an aperitif. It is exalted well with fish and shellfish. A champagne of all times, which guarantees splendor and authenticity. It should be served fresh at 10 º C in a tall and tapered glass.

The Vineyard
The grapes used for the vinification of this noble Champagne of
the French house Lallier are 30% Chardonnay and 70% Pinot Noir vinified
in white. It is a cuvée specially assembled with a selection of Grand
Cru de Champagne and collected in an artisanal way that has allowed us
to elaborate this "BUILDING". To have a profile of responsibility and
identity, we used ancestral designs with cork caps held by staples, to
enjoy the beautiful aroma of cork and a specific aging on the lees in
the depths of the cellars of the Maison lallier. All this requires a
very meticulous and manual involvement of the domestic artisans to put
in place these fasteners and staples and then remove them by hand many
years later, when it disintegrates "in flight". Another characteristic
of this product is the refined aroma and texture, as well as its
delicate and creamy effervescence, which allow us to break it down with a
very low sugar dosage. The vinification involves the alcoholic
fermentation with Lallier yeast and then the partial malolactic
fermentation of the whole Blend also composed of 2/3 of wines of the
current year and 1/3 from Lallier reserve wines. The elevation then
develops for 5 years in the cellar.
