Ramborn is Luxembourg’s premier cidery, B-Corp certified and carbon negative. The fruit is taken from their ‘standard’ – meaning full size – trees which are planted in a way that allows each tree to remain in harmony with its surroundings and encourage its own micro-bio diversity.
These trees are not of the dwarf variety, engineered to facilitate easy pruning and picking, but standard size, growing to a full height of around 30 feet, and often taking up to 6 years to crop. Nor are they planted in strict rows to encourage wild flowers and a diverse wildlife (in the past, they would often be a home to grazing cattle).Indeed, many families still do this today on a micro basis.
A pale golden colour, this lightly sparkling quince immediately appeals to the eye. The real surprise comes when the drink is ‘nosed’. This meadow orchard quince is beautifully aromatic, with notes of dill and aniseed, that’s both intriguing and utterly compelling. It’s off-dry on the palate with wonderful light flowery, herby aromatic flavours coming through that never dominate. It’s balanced by gentle acidity and finishes long, indicating its outstanding quality.
A plate of smoked salmon, the best available, the gentle dill notes of the quince caressing around the palate, intermingling with the smoky saltiness of the salmon. The off-dry palate of this unique drink balances with that saltiness makes for a match that can’t be bettered!
